Mango Custard and Lemon-Lime Summer Refresher – Low Glycemic – Vegan – GREAT!!!

Sometimes I’m just surprised at the incredible recipes that are easy, healthy and vegan. I’ve actually just started using Agave as a sweetener for the low glycemic value and I just love it. I’ve been creating easy fruit drinks that replace the sodas and sugary drinks like lemonade I used to drink. I am actually enjoying them more. Low glycemic, low calorie and vegan.

Lemon-Lime Summer Refresher

This is a recipe for one drinking glass –
2 tbsp lime juice
2 tbsp lemon juice
2 tsp Agave syrup
Adjust this for your taste. Mix with a spoon, add ice and water, mix again.

This has about 50 calories, 0 fat, 16 sugar, 16 carb, but remember the sweetener Agave is a low glycemic sweetener. It will not spike your sugar like other sweeteners. Enjoy!

Sweet and simple, this treat is the perfect finish to a spicy Asian-inspired meal. If you have guests coming, this is an impressive dessert to throw together just before they arrive, since it needs a little time in the fridge to firm up.

Serves 4

What You Need:

  • 2 mangoes
  • 1/2 cup ice
  • 12 ounces coconut milk
  • 2 teasoons agave nectar
  • 2 teaspoons agar agar powder

What You Do:

  1. In a blender, purée mangoes and ice until smooth. In a large saucepan over medium-high heat, bring coconut milk and agave nectar to a boil. Lower heat to medium. Add agar agar and whisk for about 5 minutes, until powder has dissolved.
  2. Add mango purée to coconut-milk mixture. Remove from heat, pour into serving dishes, and refrigerate about one hour before serving.

What is agar agar? It is a ‘gelatin’ that is vegan. The gelatin used in most foods is derived from animals.
