Recipe for Life: Tomatoes with Fresh Basil

Ah, the tastes of summer, I LOVE tomatoes! And this is a caprese salad without the cheese. I’m sharing 2 versions, one is vegan without oil, the other vegetarian.

So, here is the recipe by PCRM: Tomatoes with Basil.

This is a vegan, no oil version and I’m definitely going to use it with some beautiful, tasty heirloom tomatoes.

Here is my vegetarian version, so easy and adjust to your mood and taste… Yummm!:

1 – sliced organic heirloom tomato – in season and so wonderful!
3-4 slices of fresh (organic, if possible) buffalo mozzarella cheese
few splashes of organic extra virgin olive oil – the best quality you can afford
kosher salt
fresh ground pepper

The freshness and quality of the ingredients is what makes this salad great. Layer the tomatoes and mozzarella, drizzle with olive oil, add salt and pepper and you have an incredible meal.
