Grilled Portabella Mushroom Burger – Yep, this is Vegan!

Personally, I Love grilled portobello mushroom sandwiches, portobello mushrooms have protein, they taste meaty and this recipe marinates them, did you notice in the photo that the onion has been grilled, I’m going to do that, I really like grilled onion, but, do whatever makes it taste great to you. Try with some Oven Baked Sweet Potato Fries.

Use meatless Mondays to begin to introduce yourself to meals with no meat, you can cut down on fat, cholesterol and calories, it can be cheaper, it doesn’t harm any animals and it’s great for the environment. Just think if millions of us did this every week how much it would affect our health, the welfare of animals and our eco systems.

Grilled Portobello Mushroom Sandwich – EASY! Try with some Sweet Potato Fries!

Mmmm… a perfectly grilled portobello mushroom is delicate and meaty, tender and juicy. Easy to make, but oh, so sophisticated. Stack it with your favorite burger fixins on a your favorite bread (like grilled garlic focaccia!). This recipe is so simple you can make ’em every day — and you just might want to.

1/4 cup olive oil* (and some for grill)
1/4 cup balsamic vinegar
2-3 garlic cloves, minced
1/2 tsp. salt
1/4 tsp. ground pepper
4 large portobello mushrooms, stems removed
buns, rolls, focaccia, or your favorite bread
lettuce, tomato, onions, and your favorite burger toppings

1. In a shallow dish, mix oil, vinegar, garlic, salt, and pepper.
2. Add mushrooms, toss gently to coat. Marinate at room temperature for 30 minutes (or refrigerate overnight).
3. Heat grill to medium heat. Lightly bruch grill with oil grates.
4. Grill mushrooms until lightly charred and tender, 4-5 minutes per side.
5. Serve on your favorite bread with your favorite toppings.
